Coconut-chocotart

Hello hello! Another great recipe!

This is a great tart that I found long time ago in 'allerhande', so is not mine. Allerhande is the magazine given every month by the AlbertHeijn supermarkets, here in the Netherlands. Sometimes, they have quite interesting recipes and this is one of them. It is actually the favorite tart of my husband so I made it for our anniversary :)

What you need:
  • 150gr butter
  • 2 rolls of Oreo cookies (154gr)
  • 4 eggs
  • 200gr icing sugar
  • 2 tableSpoons corn flour
  • 2 teaSpoons vanilla aroma
  • ~160gr shredded coconut
  • 150gr white chocolate
  • blender - form(35x12.5cm)

Execution:

Pre-warm the oven in 160°C. Melt the butter in a small pan. Break the Oreo cookies in very small pieces. Then combined, the cookies with the butter, are the bottom of the tart. You can press them with a spoon so that they stick nicely in the bottom of your form.

In the next step, we separate the glair (white) from the yolk (yellow) of the eggs. We won't use the yolks. Mix the glairs with the blender very very good, so that they become like cream. Add and mix the sugar too. Use the blender to mix those two together for about 5 minutes. Carefully, add the corn flour, the vanilla aroma and the coconut in the mixture too.
Next step is to melt the white chocolate with the bain marie method :) In other words put a big pan with boiling water, while you have placed the pieces of chocolate in a smaller one. Place the container with the chocolate floating in the boiling water. The warmth of the water will slowly melt the chocolate. When the chocolate is melted, add it in the mixture with the rest.

Add the mixture in the form and bake in the oven for 25 minutes.
Let the tart cool down for approximately 2 hours. You can then preserve it in the fridge.
And...enjoy! Perhaps it sounds a bit complicated recipe with all those ingredients, but believe me is worth to try once and again and again! Haha!

Wizard's First Rule

Finally, I have finished this book! And I say finally, because this book is more than a story, is an addiction! I have finished it in less than 20 days, while I usually take my time while reading books.
The last days I've been living in a continuous suspense, longing for the moment I'll have this book back in my hands. Lοnging to know what happens next and as soon as I read it, something else happens and keeps this torture alive.

The last days I'm talking to everybody about this book; I am doing real life stuff and I am thinking of the main character of the book, all the things he has faced in this adventure and what is more to come and wondering how he will handle it and I am thinking of the things that puzzle his mind, and I hurt with his pain and I struggle with his throe and I ... can't help myself, I just can't take my eyes off it.

Wait a minute, is it really over now? Not exactly. This is only the first book of a great series of books 'The Sword of Truth', written by Terry Goodkind. He has very smartly placed the first chapter of the 2nd book in the end of this book. But noooo, I won't fall into the trap! I won't read it just yet. I am afraid that if I read some words more, I'm gonna want to read the next one too! Unfortunately, I have to wait for now till I go to the next one...but I do want to and I will read it!

If you like fantasy or RPG, then I'm sure you will love this book(s). This book very much reminds me of a D&D adventure. The main character, that looks like a ranger to me, has been put into an adventure against an evil wizard. Will he manage to defeat him? and how? with all these happening ..is he going to survive? Wizards, fighters, sorcerers, dragons and other mythic creatures appear in this book, sometimes to support him and sometimes not. Some of the pieces in this book are really gruesome. I remember myself thinking 'Do I really want to read this?'. But those pieces are part of the story as well and they do have something to teach you. Afterall, life is not always beautiful either. Only by seeing the cruelty in it, only then you can appreciate its beauty.

Dear reader, I think this is a book you would like to read, I recommend it!
In case you are interested, you can find more about the author  here.

Χαλβάς - Halvas

Halvas is a very tasty and easy Greek dessert to make! I say easy, because it needs only a few ingredients! Halvas is my first choice during fasting periods or when I have many visitors.

What you need:

500gr semolina (σιμιγδάλι)
3/4 of a mug sunflower oil
2 mugs sugar
4 mugs of water
cinnamon stick (optionally)

In a pan add the water, the sugar and the cinnamon stick to boil. Do stirr the mixture a bit, so that the sugar gets dissolved.
In another pan add the semolina with the oil. Turn the fire on and keep on stirring the mixture till the semolina becomes 'blond' (and not brown). You need to shuffle all the time, 'cause otherwise the bottom gets burned soon enough. When this is done, turn off the fire.
Now is the moment to add the syrup to the semolina. In case you have used cinnamon stick, you can remove it now. (You can keep it in a box for the next time)
The next step is very dangerous!! Pour very carefully the syrup to the semolina. Watch out while adding the water in hot oil !! The water expands rapidly and the oil displaces everywhere and in case it touches your skin you have serious burning injuries!
I don't want to scare you, I have done this dessert multiple times and nothing has happened. Nevertheless, is good to be carefull and a bit skillful in cooking :)
Now that the two mixtures are merged together, turn on the fire and stirr the whole mixture to become homogenized. You know it is done when it becomes solid. (For example, you push it on the side and you see that it stays there). Turn off the fire and pour the halvas in a form or in a tupperware.  Let it cool down and serve it with a bit of cinnamon dust and ... enjoy! You can save it in the fridge.

Following, I have some photos from the process. And in case you are wondering what are those brown cubes in the background, I can tell you that they are chocolate lolies. I poured melted dark chocolate inside an ice cube tray, where Ι had first put cereals :)

Oreo Ice Cream !

Hello hello! Summer is almost here and by the end of this week officially! The temperature goes higher and higher everyday! So is mine actually, 'cause it happens to have a cold the last days :(
Nevertheless, I have prepared for you a very easy recipe for homemade ice cream that you will love!
I have already made it twice the last month!

For the Oreo Ice Cream you will need:

200 ml whipped cream
400 ml sweetened milk
200 ml coffee milk or evaporated milk
1 small envelope or vanilla aroma
40 gr sugar powder
oreo biscuits

Before the whole procedure starts, leave all the ingredients for at least half an hour in the fridge. Then start with the whipped cream. The key to a successful ice cream is the whipped cream as it needs to be very well done! After mixing the whipped cream very well, I put it in the fridge and I let it to be there for as long it takes to grate the biscuits. I use ~ 5 oreo biscuits.
In the next step, I add the milk and the vanilla in the mixture with the whipped cream and I mix again. I put the mixture back to the fridge for some time and then I add the biscuits. I add the biscuits in the end and after the mixture is already cold enough, because I don't want the biscuits to sit at the bottom!
I knew this simple recipe since I was a kid, but this is the first time that I try it with oreo cookies! Oreo in greek means nice and I can tell you my ice cream was a great success! Next time I'll try another taste :) Keep the base the same and replace the oreo cookies with other biscuits/syrup/fruits and then you get a different taste of ice cream. I wish you good luck!

Discrimination

Dear readers, this time allow me to disclose some of my deepest thoughts to you. Is not that they were meant to be secret, but is more that they didn't really have the reason to be said out loud. Thus, I decided to aggregate them all in this post.

The theme of this post is about fat, yes fat, being fat, be considered as fat and all the implications that this has. In my opinion, the root of all these, is that sex sells. Our world was mainly led by men. Women are considered as a pretty creature, this humanoid creature that has to care about her body, her appearance, her kind manners, pleasing her husband and caring about the children. No matter how many trials have been made by women claiming their equal rights, this has been succeeded only in the so called, western world. I won't mention in this post the suffering of women in other countries. But I'll talk about countries, where both men and women have rights in education and in information, that is given generously on TV, radio, magazines and Internet!!. There is nothing you cannot find on the Internet! and yet the media manage to brainwash and poison our minds. Media define what is nice, what is good, what is healthy, what is manly or not, what you should want or not. The only feature that is used for this classification, is the money. If it sells is good, if not is bad. And the answer is always Boolean: Yes or No, Right or Wrong, Good or Bad. There is no middle way.

I consider myself as a lucky person, because I had the chance to study and because I had the chance to live abroad, in 2 different countries than mine. What i learned, is to be tolerant to those different than me and respect them for who they are and what they do and not how they look like. I opened my eyes, my ears and I observed the people around me. I chose whom I want to be and what is right to do. I have learned that we were not made in a mold and thus we do not look all the same.

Mainly due to my bioinformatics studies, I have learned that even if we share the same genetic information, DNA, that sort of defines that we are Homo sapiens and not e.g. zebrafish, we are still not the same. Because our body is a complicated machinery, that expresses every path of this information differently. This is why some people are blond, or have lack of adequate amount of insulin, or low blood pressure, or low testosterone and so on and so forth. I am very lucky to have gay friends or friends that chose to change their gender. 'Cause this reminds me that nothing is black and white in Biology. There is no wrong or right, is just different.

We are blond or dark, tall or short, muscular or not, with wide skeleton or not, blind, deaf... We are all those and even more in a big amount of it or less. It doesn't matter at all, because this is what makes us unique, special, beautiful! We are in this world to be real and not perfect! To share our love and create together. Any kind of classification is meant to separate us and I honestly mercy all those people that put labels to others.

I hate being told who I am, what i should do or eat. There is plenty of information out there, I know how to find it. Everybody has different body and knows well what is wrong or right for himself. If you find yourself putting different labels on other people, then you probably are a person with plenty of time. Why don't you consider finding a new hobby instead?

I came across to a project called the "The watchers". Is a book written by Haley Morris Cafiero. The book contains an aggregation of photos made by her depicting herself and people around her. She is probably considered as fat/overweight/obese by many that look at her with repulsion. And this is what she wants to show to us with her pictures. The way people look at her while she lives her daily life. The way we look at people and we name them labels. I have read that Haley holds a Bachelor in Photography and a BFA (Bachelor of Fine Arts) in Ceramics from University of North Florida and a MFA (Master in Fine Arts) in Art from University of Arizona. She is an Associate Professor and Assistant Dean at Memphis College of Art. Her series of photographs, Wait Watchers, has been featured in over 50 articles all over the world and she has appeared on CBS This Morning and NPR to discuss her photographs. She has been nominated for the 2014 Prix Pictet and is a finalist for the Renaissance Prize. From this description, I see a very active and creative person, that has good studies and she is an Associate professor and Assistant Dean! Yet, she has been criticized for her appearance. Who are you ?? that you put labels to people?

People can go as far as their knowledge and imagination allows them to. You are the only limit to yourself. Learning/reading/listening/observing makes you a greater person. And always remember, the way people behave to you shows who they are and not who you are. When people call me things, I get mad at first, but then I mercy them, because they didn't have the life and the experiences that I had.

Painting on a bag

It happens very often, that we are invited to a Birthday celebration and we don't know what present to give; either 'cause we know nothing but a few for the person, or they are very easy and tell you 'I like everything'. So what do you do when you want your present to be a special one and not just something. I like to give presents that people would be happy to receive, and not something that will end up in a closet.
So what I do is use my imagination and creativity. And oh I love to be creative! I collect all the things I have, like watercolors, colored pencils, wool and stickers etc.. and I try to make something beautiful and unique. People usually appreciate receiving presents that you make for them.
Last time that I went to a birthday celebration I offered something relatively small; a letter set ('cause as you already know I love letter writing and I know that this person does send a lot of letters). I wrapped my small present in paper and I placed it in a bag that I decorated myself!

I had a plain fabric bag. I made a plan in my mind of what I wanted to draw on it. I started with a soft pencil and gave shape to the basic structures of my image. Then I used watercolors to make it alive! In the end, I used a blue-white thread that I had, in order to 'close' the bag. It gives a Greek nuance in the present and keeps things intact. In the following images you can see the steps I followed.

Oops! I forgot to mention the most important detail! While I was painting the bag I placed some old clothing inside the bag! If you don't do so is possible that the watercolor passes through and leaves marks on the back side of the bag as well!

Decorating easter eggs

Hello Everyone!

Easter is coming and all the shops are full with cute decorations, like colored eggs, yellow chicks and cute sheep.

So I decided to make my own Easter decoration! Thus, i made decorating eggs out of paper.

I used a piece of paper, where I drew on the egg as if it would be open. It actually looks like a flower. You can decide to draw other shapes inside each side, like what I have done. You can also use different colors of paper, I used only pink, 'cause I find is cute for Easter!

Following, you can cut it out with a craft knife or a small pair of scissors. I used scissors. At this step, you might want to add some glitter to make it more fancy.

Next, is the egg's assembly. Lift two sides and stick them together with glue. Stick the third side in place at the top. Then, thread a needle, with a knot in the end, and pass it from all sides up trough the top of the egg. Stick also the last side. Use the thread to hang the egg. And... tatatata! The egg is ready!

Lemonade!

Yesterday, we had some visitors over at home for D&D! I had also many lemons in the fridge, that I was afraid they would get spoiled. Thus, I decided to make a lemonade. The recipe I got from my aunt! Last summer, while I was in Greece for holidays, she offered me this homemade lemonade, which was delicious!

I saw the lemons in my fridge and decided to make the juice myself too. I share with you the recipe :)

For the lemonade:
you need 5 lemons,
2 mugs of sugar,
1 lt water.

Use the juice of the five lemons. Add the zest from two of the lemons and the actual lemon-mugs from the rest three after wringing. In the mixture add the lemon seeds too! Next is the sugar added.
Leave the mixture in the jar for 2-3 hours, in order to become homogenized. For the sugar's dissolution, is good to stir, the mixture, now and then.
In the end, filtrate the mixture so to keep only the juice and add the liter of the water. As you can see in the following images, I put my juice in a bottle, that its capacity is not even a liter, so actually there was no space for the water. So what I did, is to fill the 1/3 of the glass with my lemon juice and the rest with water and gained the same result.

The result was a really nice juice that everybody liked! Now is your turn to try it! Let me know if this succeeds. :)

Φτιάχνω άλατα μπάνιου στο σπίτι μου.

Τα άλατα μπάνιου κάνουν την εμφάνιση τους γύρω στο 2700 π.Χ. στην Κίνα. Αιγύπτιοι,έλληνες και ρωμαίοι τα εμπορεύονται γνωρίζοντας τις αντισηπτικές τους ιδιότητες.Τα άλατα μπάνιου έχουν ευεργετικές και χαλαρωτικές ιδιότητες.Το να φτιάξεις άλατα μπάνιου είναι μια πολύ απλή διαδικασία, που δεν θα σας πάρει πάνω από πέντε λεπτά για να τα φτιάξετε.Τι είναι πέντε λεπτά μπροστά σε ένα χαλαρωτικό μπάνιο;;;
Υλικά που θα χρειαστούμε:
2 φλ.αλάτι χοντρό
1 φλ.άλατα Epsom( γνωστά και ως άλατα θειικού μαγνησίου)

When does a letter come?

My name is Eftychia and right that moment I am sitting behind the screen of my computer, in order to write this post to you. In fact, I am sitting behind my computer screen the whole day, because this is my job. I am a MSc Bioinformatics student, with Bachelor in ICT & Business and have been working as a web developer. In other words, my daily life is behind a computer. That doesn't mean I don't like it, on the contrary, I do like it! I enjoy what I do, as I enjoy writing this post to you at the moment. But what I really like is being afk (away from keyboard). And what I LOVE is postcrossing!

Our life is bombarded by computers, e-mails, text messages on the mobile phone...it is very easy to keep in touch with your friends, you only need to move your fingers. The idea of writing a letter seems outdated, boring or even funny. But be honest to yourself; who doesn't enjoy a personal letter at your postbox? Each time I get a letter, my heart gets wings and is ready to fly ! I am so happy, that I feel like every single cell of my body gets a smiley. Can you imagine that? And the reason lies to the fact that the letter is much more personal. Sending a letter is the next thing to showing up personally at someone's door.

Receiving someone's letter or card is like receiving a unique present, something that was made for you and only. The letter is something personal, you can read one's handwriting instead of Arial or Verdana! You can see the frustration, stress on somebody's handwriting or how calm and happy he/she is. A letter carries each person's thoughts, ideas, creativity, geekiness and of course feelings. Is something unique made by you aiming for a person you love/care. The paper that was earlier sitting on your desk, now sits on another's. Letters create a connection, that modern, impersonal forms of communication will never approach. And yes is me, this geek girl sitting the whole day behind her computer screen, that  hates technology when it comes to creativity, imagination, building memories, friendships and communication. A letter travels among people and places to come to you and I can't stop longing for it! So right now, you that you read my post, grab a pen and a paper and drop me a few lines. I'll make you happy too when it comes my turn!

If you think that letter writing is an old fashion, you would be surprised to know how many people, nowadays, send letters and postcards. There are many blogs related to snail-mail, stationery, stamps etc. that show how many letters are exchanged everyday (and not only for christmas), share the happiness and embrace the flame for letter writing! Anyone who has ever come across the old letters of parents and grandparents and suddenly felt transported back to another time and place, knows well the legacy-leaving power of letters. What will we leave our grandchildren? The username and password to our email accounts?

Hello World!

Hallo there! My name is Eftychia and I am one of the authors of this blog. You will get to know me better by reading my posts :)

We are 2 authors in this blog, Eftyhia and me. We are two cousins coming from Thessaloniki, Greece. Because we are cousins we also have the same first name; it is a tradition in Greece to get the same name as our grandmother.

Fate brought me in the Netherlands, where I live now, 2,438km away from my home and my cousin. Aim of this blog is to keep me and my cousin still connected and share among us and with you our daily life and hobbies. That explains the title of this blog, which is 'Crossed Countries'.

In this blog the posts will be written either in Greek or in English, depending on the mood and the target group.

Hope you enjoy your reading and will stay in touch.

Best wishes,
Eftychia
